We put HEB’s breakfast Meal Simple egg cups to the test

If you’re like me, your love for breakfast usually takes a back seat to everything else you have to get done on weekday mornings. The Monday through Friday hustle is typically powered by an obnoxiously messy granola bar, a taco, or just coffee.

Even in the work from home era, the idea of โ€‹โ€‹juggling a workout, showering and looking presentable, logging onto a morning meeting and cooking breakfast by 8 am isn’t sustainable โ€” don’t let the aesthetics-driven, TikTok “boss” girlies fool you. While I do make an effort to meal prep for the week, I don’t have the energy to cook breakfast options. The Instant Pot egg bite mold is somewhere collecting dust in my kitchen.

So imagine my egg-citement when I saw premade, ready to go, option by HEB. Granted, at about $4, they cost more than my average taqueria taco, but all are low-carb and packed with protein. HEB has four options to choose from and I tried them all, shocking my body into having an actual breakfast, for you.

Here are some first thoughts.

You can fool people into thinking you made them

I once asked Twitter if anyone had ever tricked a dinner guest into thinking they cooked a Meal Simple dinner option from scratch.

Most were pure and denied the trickery, but these little egg bites look pretty homecooked. After about a minute of “baking” in the microwave, almost all of the options had a golden crisp edge, as if you spent the morning carefully pouring the egg mix into a muffin mold.

It just might be hard to tell which is which

All of the options were delicious, fluffy little things. There’s cured ham and Swiss, unccured bacon and gouda, meat-lovers, and egg white with roasted bell pepper. The first three (we’ll get to the egg white option) sounded like my kind of party based off the label, but they all tasted similar. That’s not a bad thing, they’re all cheesy and perfectly fluffy, but looking at my notes, it would be hard to decipher which option I was referring to if I didn’t have a photo to match.

The on-the-go of it all

The process, from pulling the package from the refrigerator to finishing the last bite, takes about two minutes. If you’re truly busy, you could easily forego the plate and take the bites on the road with minimal mess.

An egg-cellent underdog story

I’ll admit, I saved (what I thought would be) my least favorite โ€” the egg whites and bellpepper bites โ€” for last. Much respect to vegetarians and vegans, but a meatless option didn’t excite me. That was before I considered the cholesterol on the other options which use a whole egg. Obviously eggs are high in cholesterol, but seeing daily values โ€‹โ€‹in the 90s for the first three egg bite duos had me choosing the last option, which only accounts for 3 percent of your daily value, for future grocery runs.

All variations have high amounts of protein, which is the macronutrient I’ve really been after.

Because no San Antonio breakfast is complete without a spicy razzle dazzle, you know I had to add salsa. I added some Cocina Fresca salsa that I had leftover from a barbecue for the first two sets, but the real winner was El Tucan, a salsa cremosa, if you’re looking for a pairing idea.

All of the options fit into a “low-carb lifestyle” if you’re following a ketogenic diet.
